What Is Honey?

Honey is a natural sweet substance made by honeybees from plant nectar, plant secretions or excretions of plant-sucking insects. Bees collect this material, transform and combine it with substances of their own, reduce its moisture, store it and leave it to mature in the comb.[1]

This definition matters commercially. Genuine honey is not simply a sugar syrup with honey flavour, colour or aroma. Codex states that honey sold as honey should contain no added food ingredient and that processing must not alter its essential composition or impair its quality.[1]

An important distinction

Bee-Made Honey vs Hygienically Packed Bottled Honey

There should be no change in the fundamental identity of the food: the honey in the bottle should still be honey made by bees. The difference is that harvested apiary honey may arrive in bulk containers with natural variation, crystals and removable matter such as small wax particles. A professional packer controls how that raw agricultural material is received, assessed, conditioned and placed into a consumer-ready pack.

What hygienic packing does not mean

It does not mean adding sugar syrup, flavour, colour or preservatives and then calling the result honey. Codex permits no food additives in honey and does not permit additions other than honey to a product sold as honey.[1]

Honey is highly viscous, and its viscosity affects pumping, settling, filtration, mixing and bottling. Carefully controlled warmth can improve flow; however, FAO guidance warns that honey’s minor components are heat-sensitive and that poorly controlled heating can cause local overheating and quality loss.[2]

Honey Manufacturing Standards

There is no single specification that automatically applies to every shipment worldwide. A responsible manufacturer works from a hierarchy: the destination country’s law, the customer’s specification, the correct product category and label, and relevant international references such as the Codex Standard for Honey.

Filtered honey has a specific meaning in some markets

Ordinary straining or filtration removes unwanted matter. In the Codex and UK/EU context, “filtered honey” can refer specifically to filtration that significantly removes pollen and may require that product name on the label. Buyers should define the filtration outcome and destination-market terminology before artwork approval.[1]

Does a honey manufacturing company actually make honey?

What is the difference between raw apiary honey and bottled honey?

Apiary honey is the agricultural product collected from the hive and extracted from comb. Bottled honey is that bee-made product after controlled receiving, quality review, conditioning where necessary, filtration or straining, hygienic filling, sealing, coding and packing. Its fundamental identity should remain honey.

Is 17–18% moisture mandatory for every honey?

No. It is a useful commercial target for suitable programmes, not a universal legal rule. Codex generally permits up to 20% moisture for ordinary honey, with named exceptions. The contractual limit should fit the honey type, buyer specification, destination law and agreed test method.

What does HMF below 40 mg/kg mean?

HMF is a useful quality indicator associated with heating and ageing. A target below 40 mg/kg aligns with the general Codex value after processing or blending. Codex provides an 80 mg/kg exception for declared tropical-origin honey and relevant blends. HMF alone does not prove authenticity.

Does filtration make honey adulterated?

No. Appropriate straining or filtration can remove wax and other unwanted physical matter. However, significant pollen removal can affect how the product must be described in some markets. Filtration requirements and label terminology should be agreed before production.

How can a buyer check that honey has no added syrup?
